    1 large onion, peeled
    1 large orange, unpeeled
    1 lemon, unpeeled
2-3 habanero or jalapeno peppers, stems removed
1 Tbs ground turmeric or 3 Tbs fresh, grated
4 rosemary sprigs or 2 Tbs dried
1/4 tsp cayenne or 1 tsp black peppercorns
2 cups + raw apple cider vinegar to cover
    *
2-4 Tbs raw honey, or more to taste

Coarsely grate the horseradish and ginger. Crush the garlic.

Roughly chop the onion and peppers. Place all in half-gallon jar along with rosemary, turmeric, and cayenne. Squeeze in the citrus, then toss in the rinds. Pour in vinegar to cover. Lay a piece of parchment on top, then tightly screw on metal lid.

Swirl or shake to combine all ingredients. Store in a dark cool spot for a month+, shaking it once a day.
